Apart from the V%, which seems to be some sort of velocity compression, i can't see where to adjust the level of tracks. Only the levels of each pads...

you can go Shift + Pad Bank (A B C or D) and that selects all of the pads at once

What will panning do for him? He wants to raise the volume not pan sounds. (you should really take advice i give you)

You need to go to the mixer screen and raise the volume for the pad that corrosponds to the track u recorded it to. For instance if pad 1 is a kick and u recorded that on track 3 then u go into the mixer screen and raise pad 1's volume up. If it is alway up then try raising the master volume which should also be accessible in the mixer screen. Try raising the db up higher.

so for this to be efficient all the time, by default samples should be at a level of, say 70, for some headroom right?

Yes, that would be a good thing to do.

The "V%" setting simply sets the Velocity of the track to a higher or lower percentage (no compression or such). But again, if a sample is at a velocity of 127 already, it won't get louder with a higher V% setting. But I think that's the only location where you can set the whole track's velocity at once.
