I end up composing in a number of different styles - alot of which does not use hats. I often will take a random sound / noise burst etc. (you need a sound with a quick attack) and work it like a hi hat by adding different elements of the sound to the same mute group or you can work it with a filter or maybe a wah wah pedal. Experiment with the swing and timing setting as well. Any constant (like a hi hat) in your music can benifit from some "movement" or dynamics...

Here's a tip.....Try a "clav" sound and turn on the timing "note repeat" at a 16th note. Just hold the pad (or key on your MIDI controller) down and vary the pressure you use on the pad. Instant groove....Use the root note.....throw in a random octave. Do it....
