Can anyone tell me,

Are all the MPC's the same quantisation-wise or are the older ones slightly
better I love what I've heard of the 2000XL and it'd be great if the 2500 & 4000 are just as good.

Please read the free downloadable manulas for each one and see what the resolutions/quantizations are. Easy.

Quantisation is how the machine corrects your beat if for some reason u
don't have perfect time.

The ability to straighten off notes within a musical grid is the best explanation I can come up with. This grid borrowed from Sonar gives a better view of the settings for quantization. Noticed that all of the MPC's except for the 4000, do at best 96ppq (pulses per quater note). The 4000 does what a computer program does...960ppq, because it itself is the closest to a computer than any of the others. ImageHopes this helps.
