If I have a 5 second sample, how can I hold the pad down for 2 seconds and only play that much? Or is that possible?

i just got my mpc a week ago, but i think i have your answer. While your in the mode + program field and you are on the pad you want click the window key you need there are two options there that will either have it on full play or the other one that you want.

i heard if you take an hour long sample of the manual then you might have your answer

yea but that requires effort. I dont think the Akai os supports that

Yes it's possible and also a basic feature, please check your manual for something like "note on" or "note off". Happy Hunting...
