MIDI data

When I have MIDI data recording and playing on the mpc do i need to use the assignable outs to output the midi track to a actual hardware/digital recorder to actually RECORD the midi, drums, etc in the final product?

Midi performance data is recorded to mpc midi tracks.

Actual audio from other gear doesnt' traditionally go into the mpc. It's supposed to be routed to a mixer/audio interface and to softdaw/harddaw for recording into channels/tracks.

midi and data are 2 separate things and have 2 different paths to travel on different cables.
