the MPC 500 Vs. The MPC 2000xl

, i have 500 right now, but slightly interested in the 2000xl, and wondering about its benefits...

is it any easy answer for you guys, or which one would you rather be working with/and why?

Short answer: 500.

I don't know. The lack of features in the 500 (as well as the ones it does have) probably don't outweigh the overall features of the 2kxl imo.
