Rec gain is only used when recording into the analogue ins (well.. you can use it with the monitor too). The max volume of your sample will be clipped to 0DB if you go over 0DB. Rec gain is usually used to boost your rec signal to as near to 0DB as you can without clipping when you are sampling through the analogue ins.
Normalising is used to boost the volume of a sample already in the machine in it's entirety (noise and all) until the max volume peak of that sample reaches on or near to 0DB.
