It always depends on your way of working things out but in many cases its : The more Ins your audio interface got, the bette or rather say faster you are.
With your setup (the mackie CR1604) you could connect all MPC outs to the mixers Ins and then mix them (to get the involve some analog EQ for example) and connect the 8 direct outs of the mixer to the 8 Ins of your Interface. So theres no need to record channel by channel with the result of much faster recording.
You could also use an interface with 4 Ins but since there are relative cheap 8Ins Interfaces I would recommend an 8Ins Interface.
