Whats a good price for a used MPC60II going for nowadays? I have someone who wants to sell it to me but I'm not sure on what to offer yet.

It really depends. If we're talking about a fully maxed (OS 3.10, RAM, SCSI, new backlight) then it could reach up to $900. If it's basic, with just the RAM, then no more than $450 should be paid.
