The hard drive acts like the memory card, only it's bigger and (unless you unscrew it the faceplate) it's not removable. Just like a normal computer hard drive you can save anything on to it (a buddy of mine used his 1000 to hold his secret porn stash - clever eh?), but in practice you'll only really want to it store files that the MPC can use. These can be audio files, like your samples (drums and whatnot) and you can save sequences/songs etc that you've recorded with your MPC. I think you can also save MIDI files onto it and import them into a sequence, although you might need JJOS for this (not sure though).
When you hook your MPC up to your computer, the drive that pops up is either the compact flash or the hard drive (or both I think if you're using both), so you can use this to transfer all of the above to and from the MPC.
