Yes that's what note off does, it only plays the sample as long as you hold the pad. You have two options for what you are wanting, one of which I already told you:
1. Cut your samples to the exact lengths you want them played
2. Know your pattern and then just assign your two pad mutes wisely. There are NO MUTE GROUPS like in the newer MPC's, there just aren't.
A lot of guys seem to use 'note off' to get a feel for what samples they want in what order, and THEN assign the pad mutes after they figure out an order/pattern so that the notes play the length that they want them to without any gaps.
The guy in that video is using one of those two methods mentioned above.
