Well, one way for companies to deal with that is not say anything at all – and that, too, can drive customers crazy.
E.g., Ableton has never announced anything until they've been pretty close to getting it out. Some people like it, and some are driven apeshit by it.
E.g., there were Live users begging for 64-bit for years, literally, as it was causing problems for those (me, for one) who built large live sets and, afaik, Ableton never said a single word on it although their members were on the forum and following the topics.
Then, BOOM, when people least expected it and a lot of ppl had given up hope and they were going all "I'll be switching to another software" etc etc, 64-beta comes out of nowhere, to everybody's surprise.
If they had given any preliminary date/month, they would've had to put up with the same kind of complaining people are doing here regarding a delayed release date.
You can never please everybody, and announcing release dates IS always flaky.
Users should get used to uncertainty, as it seems that working on a software isn't as simple as baking a cake: you can't always keep your promise to deliver it tomorrow, and sometimes it's best not to promise anything at all, and whatever your policy regarding announcing updates is, there will be users bitching.
