You are comparing it to a Mackie 8 bus mixer, which is nothing special.
The guy in the video you posted likes it because he can modify EQ by turning a physical knob...wow....you can do that with plugins as well. His point was not about mixing on the Mackie sounding better than mixing in a DAW, it was specifically about the Mackie EQ and being about to turn the EQ knobs to modify the sound of each sound.
Again, the Mackie EQ is nothing special, you can get better sounding EQ from plugins, and you can map them to a control surface for physical control.

I don't say they all sound the same, they sound different to each other, the way they mix sounds is different, the equations used to combine sounds are different to each other, it makes the sound different.
