Other than Stand Alone capabilities, what would I be sacrificing by getting the Studio? I'm not interested in a touch screen, plus I'd rather the DAW monitor to do my chops.

If you plan to buy the Studio, now would be the time to enjoy a free upgrade to 2.0 when it drops. There is a grace period of 4 months for users that bought a Studio, Ren and Touch, after that and the release of the X and Live, things could change.
