I'd love a Z8 Plugin at the very least but they could definitely improve upon that if they chose to.
But I personally think they should just beef up the current sampling system. Add a Mod Matrix, add the better envelopers, more LFO's, 3 filters. Wouldn't be too hard to bring up what they have to .

Moog was bought recently by InMusic so having Moog design MPC stand alone versions of their plugins would be pretty fantastic. Amp Sims, as is mentioned for clean sounds it's not that bad, but a solid heavy distorted guitar plugin would be great. Would love to see some granular synthesis synths or FX.

Or have I misunderstood, does that format allow existing VSTs easier to work in an MPC ?
