i know what you mean- not the best example but the guitar camp like the diggers camp seems to split into two factions; the nerds and the players....nerds fuss about the details and players fuss about the results....
btw page, hendrix and zappa are actually known for not being too anal about there gear being able to coax the best sounds out of most things they played...they had preferences (we all do) but they wouldn't restrict themselves by self imposed limits

i don't give a shyt about the average listener.. in fact the majority of people in the world wouldn't understand good music if it slapped them in the face.. also i don't think that you need to know every brand of drum skins and guitar strings used in the studio, but you can't be ignorant to the artform.
and also it's not just about the sound coming out of the guitar, it's what you put in, and there's the main difference. with a great guitar you become one with the instument, and you can just let the music channel through you. no matter how good of a player you are, if you're using a cheap japanese knock-off that doesn't feel right then you ain't going to feel right and that's going to reflect in the music.
and i don't think you can split people into two camps like that, it's not as black and white. i know people who know everything there is to know about guitars and related equipment, they can fix their own amplifiers and make their own effect pedals, they know and understand music theory perfectly and most of all are great guitar players etc etc.. but these people i would never call guitar nerds, nor would i call them just guitar players..
