LOL whatever, im a classical pianist, and when i make beats i use quantize (depending on the feel) and MIDI is the most important aspect of my setup. There are plenty of real musicians that will pull ur card on that...

Anyway as far as ideas
Everybody works differently, personally i sit there and make an entire beat in my head before i even sit down and play it. That’s just how i work. Its weird but i see the notes in my head and arrange them(obviously the process is different when im sampling)
Other people just go by train and error, just band on ish randomly until they get a melody going and build on that.
Either way sense u already know musical scales and chords, if i were in you case i would practice major/minor chord progressions. Once u get a progression you like, invert the chord and add your own melody to it, bam u got ur original sound. Most beats are only made up of 2 or 3 chords anyway. So i would really start there.
